Easy Desserts Lockdown Recipes to Try

Sweetened up lockdown life by picking your favourite lockdown recipes to one of these easy and delicious desserts at home!

Sigh, here we go again with national lockdown 2.0 in the UK. Let’s hope it’s only going to last one month because the economy has suffered enough already in this pandemic! But anyway, since we find ourselves cooped up at home with all restaurants shut, why not try your hand on some homemade desserts following these easy lockdown recipes?

These recipes that I’ve put together from other bloggers and myself are very quick and easy to make, so don’t worry if you’re not a seasoned baker! Literally, anyone can make these and I can guarantee you they’re all super delicious.

Yes, only 4 ingredients needed to make these heavenly red velvet white chocolate chip cookies at home – definitely a lockdown recipe to keep on the books! They are so quick to whip up and was honestly so addictively delicious.

The trick here is to use a cake mix, which I tried with using Betty Crocker Red Velvet Cake Mix and it turned out tremendously well.

Ingredients:

  • 1 box of Red Velvet Cake Mix
  • 2 Large Eggs
  • 120g Unsalted Butter, melted
  • 100g White Chocolate Chips/Chunks (plus more for on the top)
  • [Optional] Red Food Colouring for a brighter red colour

How to make:

  1. Pre-heat oven to 160C
  2. Mix all the ingredients together until smooth.
  3. Scoop onto a lined baking tray, spacing them out about 2 inches apart. Top with more chocolate chips/chunks on top
  4. Bake for 8-10 minutes until the surface just started to crack.
  5. Let cool down for 5 minutes before transferring to a cooling rack.

Nutella Mug Cake

Mixed in a mug and ready in two minutes in a microwave – this Nutella Mug Cake is a must to keep in the pocket whether lockdown or not. I’ve lost count of how many times this mug cake recipe turned around a bad day for me.

It’s super easy to make with ZERO fuss. If you find yourself stuck with long stressful hours working from home, this is one to quickly put a smile on your face. Additionally, as I mentioned in my original post for the recipe, this is actually a great recipe for kids to play around!

Ingredients:

  • 4 tbsp Self-raising Flour
  • 4 tbsp Sugar
  • 1 Egg
  • 3 tbsp Cocoa Powder
  • 3 tbsp Nutella
  • 3 tbsp Milk
  • 3 tbsp Vegetable Oil

Easy Tiramisu Recipe

Tiramisu might sound fancy but it’s honestly SO EASY to whip up.

The Lady Fingers (or Sponge Fingers) create a spongy cake-like texture when soaked in liquid, so it’s literally just about dipping them into a cup of cooled-down coffee and layering them up. You can easily whip up the cream mixture with an electric mixer. An easy peasy lockdown recipe to try out for sure.

Ingredients:

  • 175g Sponge Fingers / Lady Fingers
  • 300ml Double Cream
  • 250g Mascarpone Cheese
  • 150g Caster Sugar
  • ½ tsp Vanilla extract
  • 2 cups Coffee cooled down
  • Cocoa Powder for dusting & decoration

3-Ingredient Oreo Chocolate Fudge

Did you know you can easily make a creamy melt-in-your-mouth chocolate fudge with just 3 ingredients?

The original recipe was more of a Cookies & Cream Fudge, which calls for white chocolate. For me personally, white chocolate is usually too sweet to my liking and the combination of both white chocolate and condensed milk is just too much. Therefore, I swapped out the white chocolate to dark chocolate. But you can, of course, use any chocolate of your choice!

Ingredients:

  • 400g Chocolate of your choice (Bar/Chunks/Chips)
  • 400g (1 tin) Carnation Condensed Milk
  • 12 Oreo cookies, roughly chopped

How to make:

  • Melt together dark chocolate and condensed milk.
  • Stir in chopped Oreo cookies until combined (save a few pieces for the top)
  • Pour mixture into a lined baking tin/tray, top with remaining Oreo cookie pieces.
  • Refrigerate for at least 2 hours until set and firm. Cut into pieces and enjoy!

4-Ingredient Chocolate Pastry Puffs

This couldn’t be easier to make. Simply use ready-to-roll puff pastry, simply envelope them with chocolate, pop them into the oven and…TA-DA!

These are such a quick fix for a sweet tooth, requiring minimal efforts and are perfect to munch on. I’ve used milk chocolate here, but you can use Nutella (or why not both!) or any filling of your choice.

If you’re read the above recipe entry on Chocolate Oreo Fudge, I also particularly enjoy filling these puff pastries with them! What I do is save up a little batch after making the fudge mixture and refrigerate for 30 mins until it firms up just enough to make a spread (not when it has fully set into a fudge). The idea actually came from a failed batch of fudge which didn’t set properly so I improvised and turned out to be one of the best things ever!

Ingredients:

  • 320g Ready-to-Roll Puff Pastry
  • Chocolate (or any filling of your choice)
  • 1 Egg + splash of water (for egg wash)
  • Icing Sugar (to dust on top)

How to make:

  1. Preheat oven to 200C.
  2. Roll out puff pastry and slice into squares.
  3. Place your filling in the middle.
  4. Wrap pastry into any shape you like and place onto a lined baking tray.
  5. Brush pastry with egg wash.
  6. Bake for 15-20 minutes until golden in colour.
  7. Let it cool down before dusting icing sugar on top for decoration.

Easy Milk Pudding

Milk Pudding is honestly the easiest thing to make. Whenever I’ve got leftover milk at home, I’d turn it into milk puddings.

If you can somehow get your hands on some Japanese Hokkaido Milk, that would be amazing. But, of course, regular milk works perfectly fine. What you can also do is to upgrade the flavours by boiling the milk with a touch of cinnamon, cardamom, or even rose water to make a Ras Malai-influenced milk pudding!

  1. Melt the gelatin powder with the water.
  2. Heat milk, sugar and gelatin mixture. Keep stirring and bring to a boil.
  3. Divide mixture into cups.
  4. Spoon away any air bubbles. Set aside to cool down and then refrigerate for at least an hour until set.
