One-Pot Garlic Coriander Pasta Soup Recipe

This one-pot garlic coriander pasta soup recipe is one for the books because it is ridiculously easy to make and requires only five ingredients! It’s perfect for a quick lunch and its clean & simple flavours mean it’s easy to the stomach and a great recipe to whip up when you’re feeling under the weather as well. Basically, it’s just such a convenient recipe to have on hand and it’s a bonus that there’s only one pot to clean afterwards!

I’ve always been quite hesitant about one-pot pasta recipes. I’m definitely not an advocate of one-pot pasta recipes. It’s usually quite a hit-and-miss as it’s not easy to get the flavours and texture right. However, in the form of pasta soups, it can easily work quite well. This is given that the pasta used is suitable for quick cooking so you have more control over it.

How to make One-Pot Garlic Coriander Pasta Soup

Ingredients

  • Small-shaped Pasta – I usually use either small Macaroni or Ditalini
  • Garlic
  • Coriander
  • Chicken Stock – from bouillon cubes
  • Cooking Oil
  • Salt – optional, to taste

Recipe notes

  • Depending on the type & size of the pasta you’re using, cooking times may differ. Keep an eye on the pasta and check when the pasta is cooked.
  • You may need to add more water to the soup – again, it depends on the type and size of pasta you’re using as some may absorb more liquid than others.

Ingredients
  

  • 1 tbsp Cooking Oil
  • 2 cloves Garlic finely chopped
  • 80 g small-shaped Pasta Small Macaroni / Ditalini
  • 500 ml Chicken Broth
  • 10 g Coriander Leaves chopped
  • A pinch of Sea Salt to taste

Instructions
 

  • Heat oil in a large pot over medium heat and cook garlic until fragrant – roughly 1-2 minutes.
    1 tbsp Cooking Oil, 2 cloves Garlic
  • Toss in uncooked pasta and stir until the pasta is coated.
    80 g small-shaped Pasta
  • Stir in chicken broth and bring it to a boil. Simmer for about 10-15 minutes (depending on your choice of pasta), stirring occasionally, until pasta is cooked al dente.
    500 ml Chicken Broth
  • Stir in the chopped coriander and cook for another minute or two. Season with a pinch of sea salt to taste if you like. Serve immediately.
