You’re probably familiar with the names of Mamasons Dirty Ice Cream, Ramo Ramen, Moi Moi Island, Guanabana, etc. by now. And here’s a new one to add under Maginhawa Group’s belt – the Panadera Bakery.

Panadera Bakery has just opened its door last month and is already attracting loads of attention despite lockdown. I visited during their International Women’s Day collaboration with Zakiyah’s Patisserie and have also used the opportunity to try out a couple of its regular menu items too. The bakery is situated in Kentish Town, along the same strip of Maginhawa Group’s other establishments. Albeit a small space, Panadera Bakery’s cute and pastel-coloured interior oozes no short of charms.

In a nutshell, if you’re familiar with Mamasons Dirty Ice Cream, this is basically a bakery version of it. The word “Panadera” translates as “female baker” in Tagalog. And their menu includes a range of Filipino baked goods, pastries, sandwiches and drinks.

Calamansi Meringue Tart

Calamansi is a Filipino citrus variety, most similar to lemon/lime but with a sharper punch of flavours. This Calamansi Meringue Tart was an absolute delight as the tarty and zingy flavours were sharp but well-balanced with sweetness. The meringue on top featured a gentle crisp on the outside and such a beautiful fluffy and airy texture on the inside. If you’re a fan of citrus desserts, this is one delectable treat that you shouldn’t miss.

Egg Sandwich

Admittedly, I was never much of an egg sandwich fan. But this one has changed all that.

The natural sweetness from the Pandesal loaf, i.e Filipino sweet bread, paired nicely with the egg mayo, bringing out the buttery touch of flavours that made this sandwich pop. From the light exterior crisp, the fluffy bread, to the creamy egg mayo mix, the sandwich has truly hit the spot. Most importantly, it tasted really fresh, which made all the difference as well.

Corn Beef Hash Sandwich

The Corn Beef Hash Sandwich is definitely one of Panadera Bakery’s signature items. Not only is the concept unique, but the flavours were doing wonders as well. The corned beef was packed into a form of croquette/hash, offering an extra crisp that made this sandwich stood out. Each bite was packed with a fresh savoury touch of flavours from the corned beef, which was tender in texture, and paired with occasional bites of soft potato chunks. I, personally, wouldn’t mind a little bit more seasoning to add an extra oomph to the corned beef but it’s certainly still good enough as it is. It’s definitely a winning sandwich that everyone must try.

International Women’s Day Collaboration with Zakiyah’s Patisserie

For 2021 International Women’s Day, Panadera Bakery has joined forces together with Zakiyah’s Patisserie for a selection of weekend special pastries.

By way of background, Zakiyah from Zakiyah’s Patisserie is a Cordon Bleu-trained pastry chef who used to work at Mamasons Dirty Ice Cream. She currently works at the Little Bread Pedlar and also runs her own micro-bakery offering a weekly pastry menu for collection & delivery.

Pictured is the Peanut Butter & Hazelnut Praline Choux, which consisted of choux au craqelin, peanut butter cremeux, and hazelnut praline. It was an absolutely exquisite treat that rivals any other high-end patisseries. From the perfect crisp of the choux to the creamy peanut butter centre oozing out that’s tinged with a light crisp of hazelnut praline, they’ve definitely nailed it with this creation. I also tried the Leche Flan Patissier, which was tremendous as well, featuring such beautiful flavours and fragrance. The final item for the collaboration was the Buko Guava Cruffin which I didn’t try but not only did it looked phenomenal, it had some raving reviews as well.

In summary

Panadera Bakery is definitely one to watch out for. In addition to all the delicious pastries and sandwiches, they also offer a range of drinks on their menu, from regular coffees & teas to their own blockbuster creations such as Mango Float, Strawberry Latte, Milo Mocha, etc. which I look forward to returning to try out.

From all the establishments from the Maginhawa Group, I think Panadera Bakery might be their best one yet!
