In a mixing bowl, mix together tuna, jalapenos, mayo, hot sauce/sriracha, salt and black pepper until combined.

Spread butter onto the ciabatta halves and toast the bread until golden in colour.

Divide the tuna mix across the three toasted bread. Top each of them with a slice of cheddar cheese and then a handful of rocket leaves.

Press down the top halves of the bread and place the sandwiches into the oven for about 5 minutes until the cheese started to melt. Serve warm.
Notes
Oil vs water-packed tuna
You can use either one to make this tuna melt sandwich. I personally like to use oil-packed tuna because they tend to be meatier and richer in flavour. Though from a health perspective, water-packed tuna would be a little healthier than oil-packed ones. It is entirely up to your own personal preference.
