Buffalo Chicken Bites Recipe

An easy-to-make, delicious buffalo chicken bites recipe – buttermilk-marinated and coated with a generous amount of seasonings. It is the perfect nibble featuring a blend of hot and tangy flavours, with a hint of sweetness.

These buffalo chicken bites have been my favourite Sunday companion this year. 2020 has blessed me with racing Sundays, where I spend my entire Sunday afternoons for watching both MotoGP and Formula One. The two often happens on the same day back to back so I often find myself glued to my couch for hours nibbling on these chicken bites until all the races finish.

Making buffalo chicken was never really on my radar before. I’m never a huge fan for buffalo chicken either when I eat out. My main frustration when I order Buffalo Chicken when eating out is the lack of flavours on the chicken itself. A lot of the time, it’s a tasty sauce and reasonably flavoured coating, but the chicken itself felt rather bland.

So that prompted me to figure out my own take of buffalo chicken recipes. In addition, there’s a bottle of hot sauce sitting in my kitchen for a while which I’m desperate to use up. What better opportunity than to use it to make buffalo chicken bites on a Sunday? Ever since I’ve been making this often and very soon became my Sunday race day staple.

The recipe is easy to prep and the sauce is really quick to make – zero fuss at all. I usually marinate the chicken the night before and then quickly cook and whip up the sauce just before race starts around noon.

Marinating the chicken

I mentioned the lack of flavours in the chicken being my frustration above. That’s why I’m all about properly seasoning and marinating the chicken.

Similar to my Breaded Chicken Burger Recipe, I first seasoned the chicken with salt, pepper, paprika, chilli powder, garlic powder, and cumin powder. Then I marinated them in buttermilk for at least 3 hours (I usually do overnight).

If you don’t have buttermilk at home, simply add 1 tablespoon of lemon juice/vinegar to 1 cup of regular milk and let it sit until tiny curdles form.

The Coating

I used my go-to seasoning, i.e. garlic powder, paprika, chilli powder, and salt & pepper. All these seasonings get tossed and blended together with cornflour to form the coating.

I first dipped each chicken piece into the beaten egg and then drenched them with the coating before frying.

Cooking the Chicken

I prefer shallow-frying them, which gives a light crisp over the chicken. However, if you want them proper crispy, the answer is deep-frying. It’s entirely up to you but, as I said, shallow-frying is my preference as I find it easier to control (and relatively healthier).

How to make Buffalo sauce

I used Frank’s Hot Sauce in my recipe. Though you can use your own pick.

As a condiment, I personally like Cholula‘s. But for making a Buffalo Sauce, I enjoy Frank’s RedHot because it’s got a more tangy touch of flavours. I like my buffalo sauce to have that almost sweet-and-sour touch, hence the preference for the tangy flavours from Frank’s.

Buffalo sauce, in a nutshell, is a spicy hot sauce mixed with butter and an acidic component. Since Frank’s hot sauce already got a tangy touch, I opted out for further acidic touch but incorporated a touch of sweetness instead with honey and brown sugar. The end result is almost like an addictive mix of hot, sweet and sour flavour combo which, dare I say, is finger-licking good!

Ingredients
  

  • 500 g Boneless Chicken Thighs cubed
  • 2-3 tbsp Sunflower/Vegetable Oil

Marinating the chicken:

  • 1 tsp Paprika
  • 1 tsp Cumin Powder
  • 1 tsp Chilli Powder
  • 1 tsp Garlic Powder
  • Salt & Pepper
  • 1 cup Buttermilk

Coating:

  • cup Cornflour
  • 1 tsp Paprika
  • 1 tsp Chilli Powder
  • 1 tsp Garlic Powder
  • 1 Egg beaten

Buffalo Sauce:

  • ½ cup Frank's Hot Sauce
  • 4 tbsp Butter melted
  • 1 tbsp Honey
  • 1 tsp Brown Sugar

Instructions
 

  • Season the chicken with all the dry ingredients for the marinade. Marinate the seasoned chicken pieces in buttermilk for a few hours or overnight.
  • Mix together all the seasonings with the cornflour.
  • Dip marinated chicken pieces into the beaten egg. Then drench them in the coating mixture until fully coated.
  • Heat oil in a pan over medium-high heat. Shallow-fry chicken pieces until golden in colour. Set aside.
  • Make buffalo sauce by mixing all the sauce ingredients together.
  • Remove pan from heat. Transfer sauce into the still-hot pan. Add in the chicken and toss in sauce until thoroughly coated. Serve immediately.

Notes

  • Chicken thighs have been used here instead of chicken breasts because thighs tend to be more juicy and tender. You can swap interchangeably.
  • I used Frank’s Hot Sauce for this recipe, which I find most fitting. But you can replace with any other American hot sauce of your choice.
  • Prep time doesn’t include time for marinating the chicken.
