Chipotle Chicken Air Fryer Taquitos Recipe

This recipe is practically the same as the Chipotle Chicken Cheese Tacos. The difference is that we’re making taquitos here and using the air fryer as the cooking method. Why not just make air fryer tacos in the last recipe? Well, I tried several times and I didn’t like how it turned out. The tacos just inevitably turn out rather dry in the air fryer which isn’t ideal. Taquitos, however, are much easier to contain moisture. And since they’re meant to be fried anyway, it’s easy to convert into an air fryer recipe. Air fryer taquitos are simple to make and are an easy crowd-pleaser dish. Even though deep-frying will always win an edge in flavour, air fried taquitos are healthier but still tastes better than baked ones in our opinion.

What are taquitos

The word ‘taquitos’ translates as ‘little tacos’. Essentially, they are rolled tacos, and then typically fried to golden crispiness. They are also known as flauntas, which the name is inspired by their flute-like shape.

How to make air fryer taquitos

Ingredients

  • Soft tortilla wraps – corn tortilla is the traditional pick but, personally, I prefer using flour tortilla more as it’s softer and easier to roll. Either option works.
  • Grated cheese – I used a blend of mixed cheddar and mozzarella.
  • Jalapenos
  • Chipotle pulled chicken
    • Chicken Breast
    • Chipotle Paste
    • Garlic, Red Chillies, Onion
    • Tomato Passata
    • Chicken Broth
    • Fresh Coriander Leaves
    • Lime

Recipe notes

  • Tomato passata is strained tomatoes and, therefore, give a smoother texture and a slightly richer flavour. But if you don’t have any, you can substitute with the same amount of tinned chopped tomatoes.
  • The longer you cook the chicken, the more tender the meat gets and easier to shred.
  • You can prepare the chicken the day before to save time on the day of cooking!
  • If you feel that your tortilla wraps are not soft enough to roll or that they may crack at rolling, simply heat them very slightly in the microwave. (1) Place them on a plate and cover them with a paper towel. (2) Microwave for 20-30 seconds to warm them just so slightly. (3) Keep covered until use. I didn’t have this issue when using Gran Luchito soft tortilla wraps.
  • If you struggle to keep the tortilla roll together, you can use a toothpick to seal each taquito and keep them in place. I didn’t need to use any when I make them.
  • As per most air fryer recipes, always brush the food and the air fryer basket with oil. This helps to attain a golden colour and crispy texture. Preheating the air fryer is also recommended to prevent the taquitos from going soggy in the cooking process.
  • To serve, taquitos are typically either topped or served with sour cream, guacamole, salsa, and lime wedges.

Ingredients
  

  • 1-2 tbsp Cooking Oil plus more for air frying
  • 2 large Chicken Breast
  • 4-5 cloves Garlic cubed
  • 1 Onion chopped
  • 2-3 Red Chillies optional, finely chopped
  • 1 cup Chicken Broth
  • 1 cup Tomato Passata
  • 2 tbsp Chipotle Paste
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • ½ tsp Cumin Powder
  • 1 tsp Paprika
  • 1 Lime
  • 2 tbsp Fresh Coriander Leaves
  • 12 Small Soft Tortilla Wraps
  • Jalapenos sliced
  • Grated Cheese

To serve

  • Sour cream
  • Guacamole
  • Salsa
  • Lime Wedges

Instructions
 

  • Heat cooking oil in a large pot over medium heat. Cook garlic for 1-2 minutes until golden and fragrant.
    1-2 tbsp Cooking Oil, 4-5 cloves Garlic
  • Add in chopped onions and red chillies (if using). Saute for 5 minutes until golden in colour.
    1 Onion, 2-3 Red Chillies
  • Season with salt, black pepper, cumin powder, and paprika. Then stir in chipotle paste.
    2 tbsp Chipotle Paste, 1 tsp Salt, ½ tsp Cumin Powder, 1 tsp Paprika, 1 tsp Black Pepper
  • Add chicken and stir until coated. Stir in the tomato passata and chicken broth.
    1 cup Chicken Broth, 1 cup Tomato Passata, 2 large Chicken Breast
  • Simmer and cover to cook for 1 hour, stirring occasionally.
  • The chicken should be super tender at this point and easy to break into shreds. If not, leave to cook longer. The longer you cook, the more tender the chicken gets.
  • Shred the chicken, add a squeeze of lime juice and toss with chopped coriander leaves.

  • Optional step: if your tortilla wraps felt a bit dry or may crack on rolling, cover with a paper towel and microwave for 20-30 seconds to warm & soften them up slightly. Keep covered until use.

  • Scoop roughly 1-1½ tbsp pulled chipotle chicken onto the centre of the tortilla wrap. Top with sliced jalapenos and grated cheese, then roll the wrap tightly into a log. Repeat with remaining wraps.

  • Optional: if needed, you can secure the taquitos with a toothpick.
  • Preheat the air fryer to 200°C.
  • Brush a layer of oil on the air fryer basket and place the taquitos into it. Do not overcrowd and make sure the taquitos are not touching each other. Cook in batches if needed.
  • Then brush more oil over tach taquito. Cook for 6-7 minutes. Then flip each taquito, brush with more oil if needed, and cook for another 5 minutes until golden and crispy.
  • Serve with sour cream, guacamole, salsa, and lime wedges.
