One-Pot Garlic Coriander Pasta Soup Recipe

This Pasta Soup Recipe is one for the books because it’s a ridiculously easy one-pot recipe and requires only five ingredients! Perfect for a quick lunch or even when you’re feeling under the weather.

I’ve always been quite hesitant on one-pot pasta recipes. Does it work? Doesn’t the starch released from the pasta affect the texture and flavours of the dish? I tried it once, and the texture of the pasta was a bit off. So I just roll my eyes over every one-pot pasta recipe then. Until this one. And I just wished I had discovered this recipe much sooner.

This one-pot pasta recipe is originally one I stumbled across on Brooke Lark’s blog – and it’s been a life-changer. The original recipe was actually named Parmesan Pasta Soup, and the name got me curious so I decided to pin it down on my Pinterest. It was during Ramadan when I was scrolling through for recipe inspirations that I come across this recipe again.

A Light & Savoury Pasta Soup

I was craving for a pasta soup that day, wanted something light and savoury. Having a read on the original recipe, I decided to give it a go with my own take. I feel that the original recipe was going for something almost like a Cacio e Pepe concept but in a soup style. However, for me, I was envisioning something more broth-like.

Instead of a Parmesan Pasta Soup, mine’s more of a garlic and coriander broth, and I do not have any cheese in my version. I also swapped out the parsley with coriander because I feel like coriander fits better with the broth for my eastern taste buds.

After trying out the recipe during Ramadan, I found the recipe particularly fitting for both iftar and suhoor since it’s just so easy to the stomach. Ever since I’ve been making this whenever I fancy a quick light meal or lunch. The recipe is also particularly perfect if you’re feeling a bit under the weather as the flavours are pretty clean.

What Pasta Shapes to Use?

You can pretty much use any small-shaped pasta for this recipe.

My go-to is using Ditalini, also known as Tubettini, which is a small tube-shaped pasta that cooks quick and most suitable in soups.

I have also tried using Tesco’s Finest Gigli pasta (Campanelle Pasta), which cooks surprisingly quick and works well with the recipe given its larger size.

A ridiculously easy and quick one-pot pasta recipe. Clean and simple flavours, and only requires five ingredients!

  • 2 cloves Garlic finely chopped
  • 1 tbsp Oil
  • 2 cups Chicken Broth
  • 1 cup small-shaped Pasta (I used Ditalini)
  • 3 g Coriander Leaves chopped
  • a pinch of Sea Salt to season


  • Heat oil in a large pot over medium heat and cook garlic until fragrant – roughly a minute. Throw in a pinch of sea salt in as well.
  • Toss in uncooked pasta and give a stir until pasta is coated.
  • Stir in chicken broth and bring it to a boil. Simmer for about 10 minutes (depending on your choice of pasta), stirring occasionally, until pasta is cooked al dente.
  • Stir in chopped coriander, and serve immediately.


Cooking time for different pasta shapes and brands vary. The Ditalini I used needed around 15 mins to cook through, whereas the Tesco Finest’s Gigli Pasta cooks in less than 10 minutes. Adjust accordingly to your pasta of choice.
