This Creamy Spinach Sausage Pasta is giving me all the autumnal vibes! As the days get a little chillier, cream-based pasta sauces are making a more regular appearance on our dining table. The recipe is so easy and quick to whip up and is such a cosy one to savour. Using any sausage meat you prefer (I usually use either beef or lamb), it offers a luscious savoury edge to your pasta dish.
The other half like to joke that the sausage pasta is like a cheat-version of meatball pasta. I mean, he’s not entirely wrong I suppose! The sausages, when being cut and removed from their casing, are just pretty much ball-shaped ground meat. That’s certainly one way to look at it. You can also use other sausages such as the likes of frankfurters/hot dogs. Though they’ll be sausage slices instead of ‘mini meatballs’.
If available, go for sausages with unique seasonings & spices and see what extra flavours it can give you. For instance, a smoky variety could lend an extra smoky edge to your pasta dish. Or one that’s mixed with the likes of caramelised onions could offer a light sweetness! Point is, there’s plenty of room to play around with when it comes to flavour.
How to make Creamy Spinach Sausage Pasta
Ingredients
- Pasta – I used Penne. Other tube-shaped pasta, such as Rigatoni, would work well too.
- Sausages – any meat of your choice!
- Garlic, Onions – the aromatics
- Red Chilli Flakes – for a little kick of heat
- Chicken Broth – for deglaze
- Spinach
- Double Cream
- Pasta Water – to loosen up the sauce and bind it with the pasta
- Italian Hard Cheese – vegetarian version of Parmesan. For topping.
- Salt & Black Pepper – to taste

- As mentioned, try out sausages of different flavours, seasonings and spices. This could lend extra flavours to your pasta dish!
- Reserving pasta water is a key step in making a good pasta dish. Especially for a creamy sauce base, the pasta water helps to loosen up the sauce, lend flavour (from the salt), and also bind the sauce to your pasta.

Creamy Spinach Sausage Pasta
Ingredients
- 250 g Penne Pasta or other tube-shaped pasta
- 300 g Sausages* sliced
- 3 cloves Garlic finely chopped
- 1 Onion chopped
- ½-1 tsp Red Chilli Flakes optional
- 2 cups Spinach
- ¼ cup Chicken Broth
- ½ cup Double Cream
- Salt & Black Pepper to taste
- grated Italian Hard Cheese for topping
Instructions
- Bring a large pot of water to boil and season generously with salt. Cook pasta according to package instructions. Reserve ½ cup of pasta water.250 g Penne Pasta
- Meanwhile, in a large pan, heat oil over medium heat. Saute garlic & chilli flakes for 2-3 minutes until fragrant.3 cloves Garlic, ½-1 tsp Red Chilli Flakes
- Add in chopped onions and cook for 5 minutes until golden in colour.1 Onion
- Toss in chopped sausages and saute for about 5 minutes until the meat colour is no longer pink. Season with salt & black pepper.300 g Sausages*, Salt & Black Pepper
- Deglaze the pan with chicken broth and add in the spinach.¼ cup Chicken Broth, 2 cups Spinach
- Once the spinach starts to wilt, pour in the double cream and allow to simmer for 2 minutes.½ cup Double Cream
- Add in cooked pasta and the reserved pasta water. Toss to combine.
- Top with grated Italian Hard Cheese if desire. Serve immediately.grated Italian Hard Cheese
Notes
